In brief

What is the difference between minced meat, meat preparations and meat products?

EU hygiene law distinguishes minced meat, meat preparations such as seasoned burgers or marinated cuts, and meat products that have been processed, for example cooked or cured. Each category has its own production and labelling requirements.

The definitions are in Annex I of Regulation (EC) No 853/2004 (EUR-Lex) (points 1.13, 1.15 and 7.1); production requirements are in Annex III, Section V. The composition criteria for labelling minced meat, such as fat content, are in Annex VI, Part B of Regulation (EU) No 1169/2011 (EUR-Lex).

How are ingredients and allergens declared?

Processed products carry a list of ingredients in descending order of weight, with allergens such as gluten, mustard, celery or soya emphasised. The quantity of meat is stated where required.

Legal basis: Articles 9, 18, 21 and 22 and Annex II of Regulation (EU) No 1169/2011 (EUR-Lex). For halal products, the certifying body also checks that additives, flavourings and casings are permitted.

Can products be made to our own recipe?

Yes. Recipe, seasoning, fat content, portion weight and packaging can be agreed with the producing plant. The specification is confirmed in writing before production.

For restaurants and caterers, this means consistent portions and a defined product sheet. If you want to sell the products under your own brand, labelling and documents are clarified per order.

FAQ

Frequently asked questions

Are the burgers and kebab products halal-certified?

They are made by plants holding halal certification from recognised bodies, covering the meat and the other ingredients. The certificate is available per lot on request.

Which raw material is used?

The species, the cuts used and the fat content are set out in the specification and on the label. Mechanically separated meat is used only if agreed, and must then be declared as such.

What quantities are possible for our own recipe?

Minimum quantities for own recipes depend on the producing plant and are agreed per order.

Do you supply halal ground beef?

Yes. Halal ground beef (minced beef) is supplied at an agreed fat content, chilled or frozen, in bulk packs or portions. Chilled mince must be kept at 2 °C or colder.

Which temperatures apply to minced meat and meat preparations?

Under Annex III of Regulation (EC) No 853/2004, chilled minced meat must be kept at no more than 2 °C and chilled meat preparations at no more than 4 °C. Frozen mince and preparations are kept at −18 °C or colder.

Which fat limits apply to minced meat?

Annex VI of Regulation (EU) No 1169/2011 sets composition criteria for mince sold under the name minced meat: lean minced meat up to 7 % fat, pure beef mince up to 20 % and mince of other species without pork up to 25 %. The label states the maximum fat content, and the value agreed for your order is set out in the specification.

Which non-meat ingredients matter for halal processed products?

Besides the meat, ingredients such as gelatine, flavourings and their carriers, enzymes and casings must meet the standard of the certifying body. The certification of the producing plant covers the recipe, and changes to the recipe are agreed in writing.

How are doner and kebab cones supplied?

Cones are usually supplied frozen in agreed weights. Composition, for example sliced meat or a mince-based recipe, and the meat content are set out in the specification and on the label.

Can you supply pre-cooked meat products?

Cooked products such as sliced kebab meat can be requested, depending on the producing plant. They are meat products under EU hygiene law and come with their own specification and storage conditions.

How long do marinated and processed products keep?

Chilled preparations such as marinated cuts and fresh burgers have a short use-by date set by the producer. Frozen versions keep longer and suit stock planning; see our guide to storage and shelf life.

In which language are processed products labelled?

Food information must be given in a language easily understood in the country where the product is sold, under Article 15 of Regulation (EU) No 1169/2011. The label language is agreed per order and destination.

Do you supply halal beef sausages, burger patties and keema?

Sausages, burger patties and minced meat for keema can be requested; which products are available depends on the producing plant. Halal status, ingredients and allergens are stated per product, because casings, flavourings and additives also need to be halal.
